Until you get used to the amount of powder or flour to use always put in what you assume will be too much. That way if you are wrong then it is the correct consistency. Hey, in India, we prepare these with a different batter mix, substituting gram flour chickpea flour for your all purpose flour. And instead of milk, we use water. And it turns out great. Chili powder, salt and cornflour are added to the batter to make the bajjis or bondas as we call them, crispy and spicy. Perfect for a rainy day. Always made fresh just before serving hot, they are never stored in the freezer.
